Apple, Cinnamon and Cocoa Muffins
This recipe makes the most moist and light muffins and yet they are low in carbohydrates and sugar so can be eaten without guilt! They jsut hit the spot in the afternoon with a cup of green tea!
This recipe makes approx. 12 Muffins
90g almond flour
90g gram flour
2 cups of xylitol (more or less depending on desired sweetness)
2 tbsp cocoa powder
2 tspn cinnamon
2 tspn baking powder
1 1⁄2 tspn bicarbonate of soda
1⁄2 tspn sea salt
1 tbspn coconut butter melted
160ml Sour Cream or 200g Quark
2 apples, finely chopped
In a large bowl, combine the flours, xylitol, cinnamon, baking powder, bi-carb and salt. Mix well. In a separate bowl, beat together the eggs, coconut oil, sour cream/quark. Add this to the dry mixture stirring until fully combined.
Add the apples and stir to ensure an even distribution. Spoon the mix into lined muffin tins or use siiicone moulds and bake at Gas 5/ 190C for 18-20 minute, or until a skewer comes out clean.
Serve with greek yoghurt and berries!
